Vegan Carrot Cake for Healthy Eaters

Here's a tasty vegan carrot cake recipe. If you've followed my previous recipes, you will know that I am a big fan of carrot cake recipe that are easy and delightful, and the one I am about to share with you isn't an exception to that rule. This is a vegan recipe, as I mentioned, meaning that it does not contain any animal products.

Some vegans try to make certain that all edible foods are free of animal content. Many will go to great lengths in pursuit of this information. The other day I watched a documentary that highlighted animal products in food products that we'd usually imagine are completely animal product free. Items like jelly beans and marshmallows (gelatin), mustard (eggs), shortbread (shortening) and even some breakfast cereals. This recipe, however, is 100% free of all animal products thus it's absolutely ideal for vegans.

The ingredients that you'll need are as follows:

- 1 cup soy milk

- Two cups grated carrots

- Three cups flour

- Two (2) cups water

- One cup sugar

- Half (1/2) teaspoon salt

- 1 1/2 teaspoons baking soda

- One and a half cups raisins

- One and a half (1 1/2) teaspoons cinnamon

- One and a half (1 1/2) teaspoons allspice

- Half (1/2) teaspoon cloves

Preparation instructions for this cake recipe:

1. First, make sure that your oven is pre-heated to 350F (or will be when you've finished preparing everything - about ten (10) minutes).

2. In a pan, mix together the water, raisins, carrots and spices. Bring to boiling point then simmer for eight (8) minutes. Add the salt and sugar and continue to simmer for two (2) minutes more. Now mix in the remaining ingredients.

3. Switch off the stove and continue to stir the blend continuously until it cools down.

4. In a large mixing bowl, mix the flour with the sodium bicarbonate and the carrot and raisin blend. Fold these ingredients together.

5. Pour the batter into a greased baking pan and place in the oven uncovered for about fifty (50) minutes. Keep an eye on it after half an hour as all ovens do vary slightly. When it looks finished, poke the middle of the cake with a knife and if no batter sticks to it, remove the pan from the oven and let it cool for ten (10) minutes.
