Pork Chop Recipes

One does not have to be a trained chef to prepare a tasty meal. Even the easiest dish like a pork chop, could put on its “gourmet clothes” if you know the way to cook it well.

I know there are scores of pork recipes in numerous cookbooks, but the recipe I pen down here takes pork chops to an entirely new level.

This recipe serves 4 people – You can choose to divide it into 2 parts if there’s just 2 people unless ofcourse you are very hungry

4 1-in thick pork pieces two large sweet onions, Vidalia preferred, sliced very thin one cup heavy cream Salt and pepper

4 medium baking potatoes (If you are not used to cooking you can purchase readymade mashed potatoes and add some butter and milk to get them up to a decent standard) butter and milk for the potatoes if you prefer real mashed potatoes.

Spinach, greens or green veggie according to taste.

Fat isn’t good for this recipe, so remove the fatty chunks from the meat, Take a heavy skillet that’s big enough to hold the chops and put the slivers in it and heat over low flame till they shed a little fat.

Keep the flame low, put in the pork pieces and add the sliced onions and proceed to smother the mix. Add pepper & salt and then cover the skillet and cook for two hours.

Roughly one hour prior to serving time start planning the mashing and peeling of the potatoes. Do the same with the green vegetable. This isn’t a time-sensitive recipe so you can loosen up.

Once the 2 hours have elapsed, uncover the chops and place them on a 200 deg oven.

Turn the heat to higher flame, add in the cream and reduce the mixture till it has a sauce-like texture. Do not make it too thick.

Place a chop on each plate together with a generous serving of mashed potatoes. Serve the onion mix over the potatoes & meat and offer the greens on the side, maybe with some vinegar & pepper speckled on them.
